Hi JenniferKidDoing, I am freezing nettle for sauces and soups. Haven’t tried them in smoothies yet. Thanks for stopping by in this little space of ours.
Oh nettles! How awesome. Did you forage for them? It’s a little early, here, but I am looking forward to finding some.
Yes, we went into the woods to look for them. We have a spot, and it’s lots of fun every time. It had started to bloom some, but I think we got it perfect just before these last sunny days, in our parts. We have our share for the year, I think. Hopefully it will last ’til next spring.
were you freezing greens in an ice cube tray? that is very cool
Hi HeatherMama, yes. We went to pick nettle last weekend, and I am freezing them after blanching and chopping them. I can use them in soups or sauces, anything later on.

Thanks for sharing peeps into your kitchen. I love that you have a menu board. I must get more organised. My husband was cutting the grass yesterday and I made him promise not to cut the nettles. I have earmarked them for either a quiche or risotto. I’m dying to know what your cake is. LIke Tracey, I think it looks so good.
Hi Debby. Oh good! We have the nettle for next year. It had started to bloom in some parts, so we were lucky to get our share for the year. We freeze some, and we drink it (warm and cold tea) fresh as we have it that day, and I dry the rest. Everyone loves it. Oh… that cake is so good. It’s apple sauce cake from Martha Stewart, but I’m tweaking it every time. I like it less butter, less sugar, change for half whole wheat, and a little more apple sauce. It is a treat for sure!

Thank you! Yes. Love, love both things. Frozen (handy) nettle when we need it, and the visible (making me plan ahead) menu.
